The team behind the Dolphin Hotel are set to open the doors to the long awaited and much hyped Bondi Beach Public Bar, 7 days a week this December.
BBPB (Bondi Beach Public Bar) is a modern public bar, the representation of a modern-day pub in 2017, tapping into the energy and attitude of the 70s & 80s Australian pub culture. Its a community-driven, family-friendly place where people can have a drink, eat and experience quality.
Design will be sharp, raw, contemporary, €œpunk€, with lots of grey, white and black and lots of concrete. Designer George Livissianis has been given a “pretty wild” brief for the interiors, says Terzini. “I told him to think [American fashion designer] Rick Owens goes to Palm Springs via Bondi€. Matthew Bax is creating an art installation for the space and walls will feature works by late Australian photographer Rennie Ellis.
The playlist harks back to glory days of surf rock, protopunk and blissed out summery rock and roll! Heavy on Australian bands from the day and re-discovered raucous classics.
BBPB will be a post-mix-free zone and will offer a concise wine list in line with a minimal intervention philosophy by Wine Director, James Hird. The Drinks program will channel Australias 70 and 80s drinking culture, but with a modern approach, featuring the Terzini classics such as the No. 8 & Negroni Spritz, and welcome newcomers the Harvey Wallbanger & White Russian, the latter to be served in a can.
The Food will be approachable, Italo-Australian Public Bar food, accessible, easy, no fuss. The heroes will be the pizza, Romanesque, flat, crispy in style, the €˜Double Patty Bondi Matty or €˜squish burger, a rendition of a burger Monty Koludrovic made with Matty Matheson for a collab event last year at the Icebergs, €˜Bellas fried chicken, a homage to good friend Morgan McGlone, and sweets to revolve around house-made gelato by Jaclyn Koludrovic.
